Description

Zesty Mexican Taco Meatloaf takes the familiar comfort of traditional meatloaf and amps it up with bold taco spices, cheese, and veggies. This flavorful, cheesy twist is a fun and satisfying dinner option for any night of the week.


Ingredients

  • 2 lbs ground beef or ground turkey
  • 1 packet (or 2 tbsp) taco seasoning
  • 2 eggs
  • 1/2 cup bread crumbs or crushed tortilla chips
  • 1/2 cup salsa or diced tomatoes with green chiles
  • 1 small onion, finely chopped
  • 1 small bell pepper, finely chopped
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and black pepper, to taste
  • Optional: chopped fresh cilantro, jalapeños, hot sauce

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a loaf pan with parchment.
  2. In a large bowl, combine ground meat, taco seasoning, eggs, bread crumbs, onion, bell pepper, salsa, salt, and pepper.
  3. Press half the meat mixture into the loaf pan.
  4. Layer shredded cheese in the center, then top with remaining meat mixture, pressing to seal.
  5. Bake for 45–55 minutes until internal temperature reaches 160°F (71°C).
  6. Let rest for 10 minutes before slicing and serving.

  • Add corn, black beans, or jalapeños for extra texture.
  • Use almond flour or pork rinds for a low-carb version.
