Zesty Mexican Taco Meatloaf takes the familiar comfort of traditional meatloaf and amps it up with bold taco spices, cheese, and veggies. This flavorful, cheesy twist is a fun and satisfying dinner option for any night of the week.
Ingredients
- 2 lbs ground beef or ground turkey
- 1 packet (or 2 tbsp) taco seasoning
- 2 eggs
- 1/2 cup bread crumbs or crushed tortilla chips
- 1/2 cup salsa or diced tomatoes with green chiles
- 1 small onion, finely chopped
- 1 small bell pepper, finely chopped
- 1 cup shredded cheddar or Mexican blend cheese
- Salt and black pepper, to taste
- Optional: chopped fresh cilantro, jalapeños, hot sauce
Instructions
- Preheat oven to 375°F (190°C) and grease or line a loaf pan with parchment.
- In a large bowl, combine ground meat, taco seasoning, eggs, bread crumbs, onion, bell pepper, salsa, salt, and pepper.
- Press half the meat mixture into the loaf pan.
- Layer shredded cheese in the center, then top with remaining meat mixture, pressing to seal.
- Bake for 45–55 minutes until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- Add corn, black beans, or jalapeños for extra texture.
- Use almond flour or pork rinds for a low-carb version.
- Try ground chicken or a meat mix for a lighter variation.
- Top with salsa or sour cream before serving.
