Description

This Walking Taco Casserole is a bold and cheesy twist on the fairground favorite, combining seasoned ground beef, beans, chips, salsa, and melted cheese into one delicious, easy-to-make family meal. Perfect for busy weeknights, potlucks, or game days, this taco bake delivers walking taco flavor in a comforting casserole form.


Ingredients

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup salsa or enchilada sauce
  • 1 (15 oz) can black beans or pinto beans, drained and rinsed
  • 1 cup frozen corn (optional)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 34 cups tortilla chips or corn chips (crushed slightly)
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, jalapeños, green onions, avocado

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.

  3. Stir in garlic and taco seasoning. Cook for 1 minute.

  4. Add salsa, beans, and corn (if using). Simmer for 3–5 minutes until heated through.

  5. Spread a layer of crushed chips on the bottom of the prepared dish.

  6. Spoon the beef mixture over the chips and top with shredded cheese.

  7. Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.

  8. Let cool for 5 minutes. Add desired toppings before serving.
