Description

Vanilla French Beignets are light, fluffy dough pillows flavored with vanilla and coated in powdered sugar—perfect for a sweet breakfast or indulgent dessert with a warm drink.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 cup warm milk (about 110°F/43°C)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • Oil for frying (vegetable, canola, or peanut)
  • Powdered sugar, for dusting

Instructions

  1. Dissolve sugar and yeast in warm milk. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, mix eggs, butter, vanilla, and salt. Gradually add flour and yeast mixture to form a soft dough.
  3. Knead dough for 5–7 minutes until smooth. Transfer to a greased bowl, cover, and let rise for 1–1.5 hours until doubled in size.
  4. Roll out dough to 1/4-inch thickness on a floured surface. Cut into 2–3 inch squares.
  5. Heat oil in a deep pan to 350°F (175°C). Fry beignets in batches for 1–2 minutes per side until golden.
  6. Drain on paper towels and dust with powdered sugar while warm. Serve immediately.

Notes

  • Add nutmeg or cinnamon for a spiced version.
  • Fill with pastry cream, jam, or Nutella after frying.
  • Top with vanilla glaze instead of powdered sugar for a modern twist.
