Vanilla French Beignets are light, fluffy dough pillows flavored with vanilla and coated in powdered sugar—perfect for a sweet breakfast or indulgent dessert with a warm drink.
Ingredients
- 3 1/2 cups all-purpose flour
- 1 cup warm milk (about 110°F/43°C)
- 1/4 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- Oil for frying (vegetable, canola, or peanut)
- Powdered sugar, for dusting
Instructions
- Dissolve sugar and yeast in warm milk. Let sit for 5–10 minutes until foamy.
- In a large bowl, mix eggs, butter, vanilla, and salt. Gradually add flour and yeast mixture to form a soft dough.
- Knead dough for 5–7 minutes until smooth. Transfer to a greased bowl, cover, and let rise for 1–1.5 hours until doubled in size.
- Roll out dough to 1/4-inch thickness on a floured surface. Cut into 2–3 inch squares.
- Heat oil in a deep pan to 350°F (175°C). Fry beignets in batches for 1–2 minutes per side until golden.
- Drain on paper towels and dust with powdered sugar while warm. Serve immediately.
Notes
- Add nutmeg or cinnamon for a spiced version.
- Fill with pastry cream, jam, or Nutella after frying.
- Top with vanilla glaze instead of powdered sugar for a modern twist.
- Serve with chocolate sauce or fruit compote for dipping.
- Dough can be made ahead and refrigerated overnight.
