Ingredients
- 1 baguette or Italian bread, sliced into ½-inch thick pieces
- 2 cups fresh tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 3 garlic cloves, minced
- 1/4 cup unsalted butter, softened
- 2 tbsp olive oil, divided
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix softened butter, minced garlic, 1 tbsp olive oil, salt, and pepper to make garlic butter.
- Spread garlic butter evenly over each bread slice.
- Place bread slices on a baking sheet and bake for about 10 minutes until edges are golden and crisp.
- While bread bakes, mix diced tomatoes, chopped basil, remaining olive oil, salt, and pepper in a bowl.
- Remove toasted bread from oven and top each slice with the tomato basil mixture.
- If using, sprinkle grated Parmesan cheese on top and return to oven for an additional 2–3 minutes to melt slightly.
- Serve warm as an appetizer or side dish.
Notes
- Add mozzarella or burrata under the tomato topping for extra richness.
- A drizzle of balsamic glaze or chopped olives adds a Mediterranean twist.
- Red pepper flakes in the garlic butter add a spicy kick.
- Reheat leftovers in the oven, not microwave, to maintain crispness.
