Description

This Tater Tot Sausage Breakfast Casserole is a hearty, cheesy, and satisfying make-ahead breakfast dish featuring savory sausage, crispy tater tots, fluffy eggs, and melted cheddar cheese. It’s perfect for feeding a crowd or enjoying a delicious start to a busy day.

Ingredients

  • 1 lb breakfast sausage (pork or turkey)
  • 1 bag (32 oz) frozen tater tots
  • 8 large eggs
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess grease.
  3. Spray a 9×13-inch baking dish with non-stick cooking spray and spread the cooked sausage evenly in the bottom.
  4. Layer frozen tater tots in a single, even layer over the sausage.
  5. In a large bowl, whisk together eggs, milk, salt, pepper, and optional seasonings.
  6. Pour the egg mixture evenly over the sausage and tater tots.
  7. Sprinkle shredded cheddar cheese generously on top.
  8. Bake uncovered for 45–50 minutes, or until eggs are set and the top is golden brown.
  9. Let the casserole cool for a few minutes before serving.

Notes

  • Prep the night before and bake fresh in the morning for convenience.
  • Customize with vegetables like bell peppers, mushrooms, or onions.
  • Swap sausage for bacon or vegetarian alternatives.
  • Try different cheeses such as mozzarella or pepper jack.
  • Add hot sauce or green chilies for a spicy twist.
