Description

Sweet Potato Rounds with Goat Cheese & Cranberries are festive bite-sized appetizers made with roasted sweet potato slices, creamy goat cheese, tart cranberries, and a drizzle of honey—perfect for holidays or casual gatherings.


Ingredients

  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz goat cheese, softened
  • 1/3 cup dried cranberries
  • 1 tbsp honey or maple syrup (optional)
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice sweet potatoes into 1/2-inch thick rounds, keeping the skin on.
  3. Toss rounds in olive oil, salt, and pepper, then spread them in a single layer on the baking sheet.
  4. Roast for 20–25 minutes, flipping halfway through, until tender and golden brown.
  5. Let the rounds cool slightly, then top each with a dollop of goat cheese.
  6. Sprinkle dried cranberries on top and drizzle with honey or maple syrup if desired.
  7. Garnish with fresh thyme or rosemary before serving.
