Ingredients
- 2 medium sweet potatoes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz goat cheese, softened
- 1/3 cup dried cranberries
- 1 tbsp honey or maple syrup (optional)
- Fresh thyme or rosemary for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice sweet potatoes into 1/2-inch thick rounds, keeping the skin on.
- Toss rounds in olive oil, salt, and pepper, then spread them in a single layer on the baking sheet.
- Roast for 20–25 minutes, flipping halfway through, until tender and golden brown.
- Let the rounds cool slightly, then top each with a dollop of goat cheese.
- Sprinkle dried cranberries on top and drizzle with honey or maple syrup if desired.
- Garnish with fresh thyme or rosemary before serving.
Notes
- For best results, use soft goat cheese that’s easy to spread or pipe.
- Serve slightly warm or at room temperature for best flavor.
- To make ahead, roast the sweet potatoes and store separately from toppings until ready to assemble.
