Description

This Sweet and Savory Mongolian Ground Beef Noodles recipe is a fast, flavorful weeknight dinner made with ground beef, noodles, and a sticky Mongolian-style sauce. With rich soy, garlic, and brown sugar flavor in every bite, this one-pan meal is a family favorite that’s easy to customize and ready in under 30 minutes.

Ingredients

  • 1 lb ground beef
  • 8 oz noodles (ramen, lo mein, spaghetti, or rice noodles)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional)
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tbsp brown sugar
  • 1 tbsp hoisin sauce or oyster sauce
  • 1 tsp cornstarch
  • ¼ cup water
  • 1 tsp sesame oil
  • 12 tbsp vegetable oil (for cooking)
  • 2 green onions, sliced
  • Optional: red pepper flakes or chili oil for heat

Instructions

  1. Cook noodles according to package directions. Drain and set aside.

  2. In a large skillet, heat vegetable oil over medium-high heat. Add ground beef and cook until browned. Drain excess grease.

  3. Stir in garlic and ginger. Cook for 1 minute until fragrant.

  4. In a bowl, whisk soy sauce, brown sugar, hoisin or oyster sauce, cornstarch, and water.

  5. Pour sauce into the skillet. Simmer for 2–3 minutes until thickened.

  6. Add noodles to the skillet. Toss to coat evenly in the sauce.

  7. Drizzle with sesame oil and stir in sliced green onions.

  8. Serve hot, topped with red pepper flakes or chili oil if desired.

Notes

  • Add broccoli, bell peppers, or snap peas for extra veggies.
  • Ground turkey or chicken can replace beef for a leaner option.
  • Garnish with sesame seeds or chopped peanuts for crunch.
  • Store sauce and noodles separately if prepping ahead.
  • Reheat with a splash of water to loosen sauce.
