Description

Super Soft Vanilla Breakfast Cake is a light, fluffy, and tender cake with just the right touch of sweetness—perfect for enjoying with your morning coffee or tea.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk or buttermilk
  • 2 teaspoons vanilla extract
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 or 9×9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry, mixing until just combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar if desired before serving.
