Description

Ingredients

  • Crust:
  • 1 roll (about 16 oz) prepared sugar cookie dough (store-bought or homemade)
  • Cheesecake Filling:
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp all-purpose flour (optional)
  • Optional Toppings:
  • Whipped cream
  • Sprinkles
  • Sugar cookie crumbles
  • Fruit preserves or fresh berries

Instructions

  1. Preheat oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
  2. Press sugar cookie dough into the bottom of the pan. Bake for 10–12 minutes until puffed but not fully set. Let cool slightly.
  3. Beat cream cheese and sugar until smooth. Mix in sour cream and vanilla.
  4. Add eggs one at a time, mixing just until combined. Stir in flour if using.
  5. Pour filling over the crust and smooth the top.
  6. Bake for 50–60 minutes until edges are set and center jiggles slightly.
  7. Cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4 hours or overnight.
  8. Top with whipped cream, sprinkles, or cookie crumbles before serving if desired.
