Description

Strawberry Lemonade Popsicles are refreshing, fruity frozen treats made with fresh strawberries, lemon juice, and a touch of natural sweetener—perfect for cooling down on hot summer days.


Ingredients

  • 2 cups fresh strawberries, hulled
  • 1/2 cup freshly squeezed lemon juice (about 34 lemons)
  • 1/3 cup granulated sugar or honey (adjust to taste)
  • 3/4 cup water
  • Optional: 1 teaspoon lemon zest

Instructions

  1. Combine strawberries, lemon juice, sugar or honey, water, and optional lemon zest in a blender.
  2. Blend until smooth. For a smoother texture, strain the mixture through a fine mesh sieve to remove seeds.
  3. Taste the mixture and adjust sweetness or acidity as desired.
  4. Pour the mixture into popsicle molds, leaving a little space at the top.
  5. Insert sticks and freeze for 4–6 hours, or until solid.
  6. To release popsicles, run warm water over the outside of the molds for a few seconds and gently remove.

Notes

  • Use frozen strawberries (thawed) if fresh are not available.
  • Swirl in yogurt for a creamy variation.
  • Try maple syrup instead of sugar for a richer flavor.
  • Layer with lemonade for a two-tone effect.
  • Add sliced strawberries or other fruits for texture.
