Description
Strawberry Lemonade Popsicles are refreshing, fruity frozen treats made with fresh strawberries, lemon juice, and a touch of natural sweetener—perfect for cooling down on hot summer days.
Ingredients
- 2 cups fresh strawberries, hulled
- 1/2 cup freshly squeezed lemon juice (about 3–4 lemons)
- 1/3 cup granulated sugar or honey (adjust to taste)
- 3/4 cup water
- Optional: 1 teaspoon lemon zest
Instructions
- Combine strawberries, lemon juice, sugar or honey, water, and optional lemon zest in a blender.
- Blend until smooth. For a smoother texture, strain the mixture through a fine mesh sieve to remove seeds.
- Taste the mixture and adjust sweetness or acidity as desired.
- Pour the mixture into popsicle molds, leaving a little space at the top.
- Insert sticks and freeze for 4–6 hours, or until solid.
- To release popsicles, run warm water over the outside of the molds for a few seconds and gently remove.
Notes
- Use frozen strawberries (thawed) if fresh are not available.
- Swirl in yogurt for a creamy variation.
- Try maple syrup instead of sugar for a richer flavor.
- Layer with lemonade for a two-tone effect.
- Add sliced strawberries or other fruits for texture.
- Store in molds or freezer bags for up to 3 weeks.
