Ingredients
- 1/2 cup active sourdough starter (fed and bubbly)
- 3 cups bread flour (plus more as needed)
- 3/4 cup whole milk (or milk of choice), warmed
- 1/4 cup water, room temperature
- 2 tablespoons butter, softened
- 1 tablespoon honey or sugar
- 1 1/4 teaspoons salt
Instructions
-
In a large bowl, combine sourdough starter, warm milk, water, honey, and softened butter. Mix well.
-
Gradually stir in bread flour and salt until a rough dough forms.
-
Knead for 8–10 minutes until dough becomes smooth and elastic.
-
Transfer to a greased bowl, cover, and let rise at room temperature for 4–6 hours, until doubled.
-
Gently shape dough into a log and place in a greased 9×5-inch loaf pan.
-
Cover and let it rise again for 1–2 hours, until the dough crests above the rim.
-
Bake at 375°F (190°C) for 35–40 minutes, until golden and hollow-sounding when tapped.
-
Cool completely before slicing.
Notes
- Add 1 tbsp olive oil to the dough for added softness.
- Swap 1/2 cup bread flour for whole wheat flour for more fiber and nutty flavor.
- Top with oats or sesame seeds before baking for texture.
- For a sweet version, add raisins and cinnamon during shaping.
