Ingredients
- 12 oz smoked or chicken sausage, sliced into rounds
- 2 large sweet potatoes, peeled and diced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- For the honey garlic sauce:
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp Dijon mustard (optional)
- 1/4 tsp red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment or foil.
- Toss sweet potatoes with olive oil, salt, and pepper. Spread on sheet pan and roast for 15 minutes.
- Add sausage slices to the pan, toss with sweet potatoes, and roast for another 15 minutes.
- Meanwhile, whisk together honey, soy sauce, garlic, Dijon mustard, and red pepper flakes.
- Drizzle sauce over sausage and potatoes, toss gently, and return to oven for 5–10 minutes, until caramelized and glazed.
- Garnish with chopped parsley and serve warm.
