Description

This Sausage Cream Cheese Tater Tot Breakfast Casserole is a comforting, hearty breakfast dish layered with crispy tater tots, flavorful sausage, melty cream cheese, and fluffy eggs. Perfect for brunch or meal prep, it’s a crowd-pleasing favorite.

Ingredients

  • 1 lb breakfast sausage
  • 8 oz cream cheese
  • 1 (32 oz) bag frozen tater tots
  • 8 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or butter for greasing the baking dish

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a skillet over medium heat, cook sausage until browned and crumbled. Drain excess grease.
  3. Stir cream cheese into the sausage until melted and fully combined.
  4. In a separate bowl, whisk together eggs, milk, salt, and pepper.
  5. Spread sausage and cream cheese mixture evenly in the prepared baking dish.
  6. Pour egg mixture over the sausage layer.
  7. Sprinkle shredded cheddar cheese on top.
  8. Arrange frozen tater tots in a single layer over the cheese.
  9. Bake for 45–50 minutes, or until eggs are set and tater tots are golden brown and crispy.
  10. Let cool for a few minutes before slicing and serving.

Notes

  • Add chopped bell peppers or onions for extra flavor.
  • Use spicy sausage for a kick or substitute with bacon or ham.
  • Try pepper jack cheese instead of cheddar for variation.
  • Swap tater tots with roasted cauliflower for a lower-carb version.
