Ingredients
- 6 small to medium yellow or sweet onions, peeled and halved
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 2 garlic cloves, minced
- Optional: fresh thyme or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Slice peeled onions in half through the root and arrange cut-side down in a baking dish.
- Drizzle with olive oil and season with salt and black pepper.
- Roast for 30–40 minutes, flipping halfway, until onions are golden and tender.
- While onions roast, combine heavy cream, minced garlic, and Parmesan in a saucepan over low heat. Simmer gently until slightly thickened, about 5–7 minutes.
- Pour the cream sauce over the roasted onions and return to the oven for 10–15 minutes, until bubbly and lightly golden on top.
- Garnish with fresh herbs if desired and serve warm.
