Description

These Refreshing Strawberry Mango Popsicles are a tropical, fruity treat made with real fruit and no artificial ingredients. Sweet, colorful, and kid-friendly, they’re the perfect homemade popsicles to cool down on a hot summer day.

Ingredients

  • 1 1/2 cups fresh or frozen mango chunks
  • 1 1/2 cups fresh or frozen strawberries, hulled
  • 12 tbsp honey or maple syrup (optional, to taste)
  • 12 tsp fresh lime juice
  • 1/41/3 cup water or coconut water (as needed for blending)

Instructions

  1. Make the mango layer: Blend mango with a splash of water or coconut water, 1 tsp lime juice, and sweetener if needed. Blend until smooth and set aside.
  2. Make the strawberry layer: Rinse blender, then blend strawberries with a splash of water, lime juice, and optional sweetener until smooth.
  3. Assemble: Pour the fruit purees into popsicle molds—either in layers or swirl them gently for a marbled effect.
  4. Freeze: Insert sticks and freeze for 4–6 hours, or overnight for best results.
  5. Unmold: Run molds under warm water for a few seconds to release popsicles before serving.

Notes

  • Add Greek yogurt or coconut milk for a creamy twist.
  • Mix in pineapple or banana for variety.
  • Blend in a handful of spinach with the mango for a hidden veggie boost.
  • Adjust sweetener based on fruit ripeness or skip it for a no-sugar version.
  • For clean layers, freeze each layer for 30–60 minutes before adding the next.
