Description

Poor Man’s Husband Casserole is a budget-friendly comfort food dish made with layers of seasoned ground beef, noodles, a creamy cheese mixture, and melted cheddar for a cozy, hearty meal everyone loves.


Ingredients

  • 8 oz egg noodles
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce or pasta sauce
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning (optional)
  • Butter or cooking spray (for greasing the baking dish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package directions; drain and set aside.
  3. In a skillet, cook ground beef with onion and garlic until browned; drain excess grease.
  4. Stir in tomato sauce, salt, pepper, and Italian seasoning if using. Simmer for a few minutes.
  5. In a bowl, mix sour cream and cottage cheese until combined.
  6. Layer half of the noodles in the baking dish, then spread half of the cheese mixture and half of the meat sauce. Repeat the layers.
  7. Sprinkle shredded cheddar cheese evenly over the top.
  8. Bake for 25–30 minutes, until hot and bubbly with melted, golden cheese.
  9. Let rest a few minutes before serving.

  • Swap ground beef with turkey or sausage for variation.
  • Add spinach, mushrooms, or diced tomatoes for more flavor and nutrition.
  • Use ricotta instead of cottage cheese or add mozzarella for extra cheesiness.
