Description

Peanut Butter Banana French Toast Roll-Ups are warm, gooey breakfast treats made by rolling soft bread with peanut butter and banana, then coating and frying them like classic French toast.

Ingredients

  • 8 slices soft sandwich bread (white or whole wheat)
  • 2 ripe bananas, sliced into strips
  • 1/3 cup creamy peanut butter
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp butter (for cooking)
  • Powdered sugar or maple syrup, for serving (optional)

Instructions

  1. Trim crusts from bread slices and flatten each slice with a rolling pin.
  2. Spread a thin layer of peanut butter on each slice. Place a banana strip along one edge and roll up tightly.
  3. In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
  4. Dip each roll-up into the egg mixture, coating fully.
  5. Melt butter in a skillet over medium heat. Cook roll-ups until golden brown on all sides, turning frequently.
  6. Serve warm with powdered sugar or maple syrup if desired.

Notes

  • Substitute almond butter or Nutella for variety.
  • Add mini chocolate chips or honey before rolling for extra sweetness.
  • Roll in crushed cereal before dipping for added crunch.
  • Reheat in a toaster oven to retain crispiness; avoid microwaving.
  • Freeze cooked roll-ups and bake from frozen for quick meals.
