Ingredients
- 8 slices soft sandwich bread (white or whole wheat)

- 1/2 tsp vanilla extract

Instructions
- Trim crusts from bread slices and flatten each slice with a rolling pin.
- Spread a thin layer of peanut butter on each slice. Place a banana strip along one edge and roll up tightly.
- In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla extract.
- Dip each roll-up into the egg mixture, coating fully.
- Melt butter in a skillet over medium heat. Cook roll-ups until golden brown on all sides, turning frequently.
- Serve warm with powdered sugar or maple syrup if desired.
