Ingredients
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 shallot, finely chopped
- 1 cup orzo pasta
- 2 cups low-sodium chicken or vegetable broth
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 cup chopped fresh parsley or dill
- 1–2 cups baby spinach (optional)
- Salt and pepper, to taste
