Description

One Skillet Salmon with Lemon Orzo is a quick, flavorful meal that combines juicy salmon fillets and creamy lemon-infused orzo in one easy pan. With fresh herbs, citrusy brightness, and minimal cleanup, this 30-minute dinner is perfect for weeknights or casual entertaining.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 shallot, finely chopped
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken or vegetable broth
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup chopped fresh parsley or dill
  • 12 cups baby spinach (optional)
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Season salmon fillets with salt and pepper. Sear skin-side down for 4–5 minutes, then flip and cook another 2–3 minutes. Remove and set aside.

  3. In the same skillet, sauté garlic and shallot until fragrant, about 1–2 minutes.

  4. Add orzo and toast for 1 minute, then stir in broth and lemon zest.

  5. Simmer uncovered for 8–10 minutes, stirring occasionally, until orzo is tender and creamy.

  6. Stir in lemon juice and spinach (if using) until wilted.

  7. Return salmon to skillet and sprinkle with fresh herbs.

  8. Serve warm, optionally with lemon wedges.


Notes

  • Use trout, cod, or shrimp instead of salmon for variation.
  • Stir in cream cheese or a splash of cream for a richer orzo.
  • Add sun-dried tomatoes or artichokes for a Mediterranean twist.
  • For extra zest, add lemon slices to the pan before serving.
