Description

This One-Pot Creamy Beef is a quick and comforting dinner made with ground beef, tender pasta, and a rich, cheesy cream sauce—all cooked in a single pot. It’s hearty, flavorful, and ready in under 30 minutes, making it the perfect easy weeknight meal for families or meal prep.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups pasta (elbow, penne, or rotini)
  • 3 cups beef broth
  • 1/2 cup heavy cream or half-and-half
  • 2 tbsp cream cheese or sour cream (optional, for extra creaminess)
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning or smoked paprika (optional)
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large pot or deep skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.

  2. Add diced onion and garlic. Sauté 2–3 minutes until softened and fragrant.

  3. Stir in pasta, beef broth, salt, pepper, and seasoning. Bring to a boil, then reduce heat and cover.

  4. Simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.

  5. Stir in heavy cream, cream cheese (if using), and shredded cheese. Mix until smooth and creamy.

  6. Taste and adjust seasoning. Garnish with parsley and serve hot.

Notes

  • Add frozen peas, spinach, or chopped bell peppers for more veggies.
  • Swap beef for ground turkey or chicken for a lighter version.
  • Use gluten-free pasta or dairy-free alternatives if needed.
  • For spice, stir in chili flakes or a dash of hot sauce.
  • Smoked paprika adds great depth and a smoky twist.
