Ingredients
- 2–4 white fish fillets (cod, halibut, or tilapia)
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 3 garlic cloves, minced
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 2 tbsp fresh parsley or basil, chopped
- Lemon slices, for garnish (optional)
Instructions

Preheat oven to 400°F (200°C).

In a baking dish, place fish fillets and surround with cherry tomatoes, olives, sliced red onion, and garlic.

Drizzle olive oil and lemon juice over everything. Season with salt, pepper, and oregano.

Bake for 15–20 minutes, or until fish flakes easily with a fork.

Remove from oven, sprinkle with fresh herbs, and garnish with lemon slices. Serve immediately.
