Description
OMG Taco Cupcakes are mini taco bites baked in muffin tins with layers of seasoned meat, beans, cheese, and salsa in crispy wonton wrappers. They’re a fun, flavorful, and crowd-pleasing twist on traditional tacos.
Ingredients
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/3 cup water
- 1 cup shredded cheddar or Mexican blend cheese
- 24 wonton wrappers
- 1/2 cup refried beans or black beans (optional)
- 1/4 cup salsa or taco sauce
- 1/4 cup sour cream
- 1/2 cup chopped lettuce
- 1/2 cup diced tomatoes
- 2 tbsp sliced green onions
- Optional toppings: jalapeños, olives, avocado
Instructions
- Preheat oven to 375°F and spray a muffin tin with non-stick spray.
- Brown ground beef in a skillet over medium heat. Drain fat, then stir in taco seasoning and water. Simmer until thickened.
- Place one wonton wrapper in each muffin cup to form a base.
- Layer with refried beans (if using), seasoned meat, cheese, and salsa.
- Add a second wonton wrapper and repeat layers of meat, cheese, and salsa.
- Bake for 15–18 minutes until edges are golden and crispy.
- Cool slightly before removing from pan. Top with sour cream, lettuce, tomatoes, green onions, and optional toppings.
Notes
- Swap ground beef with chicken, turkey, or chorizo.
- Make it vegetarian with black beans, corn, and peppers.
- Use pepper jack or queso blanco for different cheese flavors.
- Skip second layer for a quicker version.
- Store toppings separately if making ahead.
