Ingredients
- 2 cups fresh rhubarb, chopped
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk or buttermilk
- 1 tsp vanilla extract
- Optional: 1 tbsp cinnamon sugar or coarse sugar for topping
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round or square baking dish.
- In a small bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- Add the flour mixture in batches, alternating with milk, and mix until just combined.
- Fold in the chopped rhubarb gently.
- Pour the batter into the prepared pan and smooth the top.
- Sprinkle with cinnamon sugar or coarse sugar if desired.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly before serving warm or at room temperature.
