Description

Oatmeal Raisin Cookie Bars are soft, chewy dessert bars made with oats, raisins, and warm cinnamon—everything you love in an oatmeal cookie, but easier to make and perfect for slicing and sharing.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup raisins
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it well.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs and vanilla extract until smooth.
  5. Gradually stir dry ingredients into the wet mixture. Fold in raisins and nuts, if using.
  6. Spread the dough evenly into the prepared pan and press it down gently.
  7. Bake for 25–30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Cool completely in the pan, then slice into bars.

Notes

  • Soak raisins in warm water for 10 minutes for extra plumpness.
  • Swap raisins for dried cranberries, chopped dates, or chocolate chips for variation.
  • Use quick oats for a softer texture if needed.
  • Add a slice of bread to the storage container to keep bars soft longer.
  • Can be made gluten-free using a 1:1 GF flour blend and certified GF oats.
