Ingredients
- For the crust:
- 1½ cups crushed shortbread cookies or graham crackers
- 5 tablespoons melted butter
- For the cheesecake filling:
- 16 oz cream cheese, softened
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup thick caramel sauce (homemade or store-bought)
- 2 cups whipped topping or whipped cream
- 1 cup chopped Twix bars
- For the ganache topping:
- ¾ cup semi-sweet chocolate chips
- ½ cup heavy cream
- Extra chopped Twix bars for garnish
Instructions
-
Make the crust: Mix cookie crumbs with melted butter until evenly moistened. Press into the bottom of a springform pan. Chill while preparing the filling.
-
Prepare the filling: Beat cream cheese until smooth. Add powdered sugar, vanilla, and caramel sauce. Mix until creamy.
-
Fold in whipped topping gently, then stir in chopped Twix bars.
-
Spread filling over the crust. Smooth the top. Chill for at least 4 hours until firm.
-
Ganache topping: Heat heavy cream until steaming (not boiling). Pour over chocolate chips and let sit for 2–3 minutes. Stir until smooth.
-
Once slightly cooled, pour ganache over cheesecake. Spread gently and top with more chopped Twix. Chill another hour to set.
-
Slice and serve chilled.
Notes
- Use an Oreo crust for a chocolatey twist.
- Add a sprinkle of flaky sea salt over the ganache for a salted caramel vibe.
- For mini versions, assemble in cupcake liners for bite-sized cheesecake cups.
