Ingredients
- 1 1/2 cups graham cracker crumbs or crushed digestive biscuits
- 1/3 cup melted butter
- 2 tablespoons granulated sugar
- 1 can (14 oz) sweetened condensed milk
- 8 oz cream cheese, softened
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Whipped topping or whipped cream, for garnish (optional)
Instructions
- Combine graham cracker crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a parchment-lined 8×8 inch pan. Chill in the refrigerator while preparing the filling.
- In a separate bowl, beat the cream cheese until smooth.
- Add sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Beat until smooth and creamy.
- Pour the filling over the chilled crust and smooth the top.
- Refrigerate for at least 4 hours, or until fully set.
- Slice into squares and garnish with whipped topping or lemon zest if desired.
