Ingredients
- 2–4 boneless, skinless chicken breasts

- 2 cloves garlic, minced
- 1 small onion or shallot, finely chopped
- 1 tbsp olive oil or butter
- 1/4 cup cream cheese or 1/2 cup shredded mozzarella
- 1 tbsp fresh parsley or thyme, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika (optional)
- Toothpicks or kitchen twine for securing
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and garlic in olive oil or butter until fragrant. Add mushrooms and cook until browned and liquid evaporates. Remove from heat and stir in cheese and herbs.
- Cut a pocket into each chicken breast and season with salt, pepper, and paprika.
- Stuff each breast with mushroom mixture and secure with toothpicks.
- Sear in an oven-safe skillet for 2–3 minutes per side until golden.
- Transfer skillet to oven and bake for 20–25 minutes, or until internal temperature reaches 165°F.
- Let rest for a few minutes before slicing and serving.
