Description
Mexican Pizza is a delicious fusion of Tex-Mex and classic pizza, made with crispy tortillas layered with refried beans, seasoned ground beef, melty cheese, and zesty toppings. It’s easy, customizable, and perfect for any casual meal.
Ingredients
- 4 flour tortillas
- 1/2 lb ground beef
- 1 packet taco seasoning
- 1/2 cup refried beans
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack or Mexican blend cheese
- 1/3 cup tomato sauce or enchilada sauce
- 1/4 cup diced tomatoes
- 2 tbsp sliced black olives
- 2 tbsp chopped green onions
- Sour cream (optional)
- Jalapeños or hot sauce (optional)
- 1 tbsp oil (for crisping tortillas)
Instructions
- Brown ground beef in a skillet over medium heat. Drain fat, add taco seasoning and a splash of water, and simmer until thickened.
- In another pan, lightly fry or toast tortillas in oil until golden and crispy. Set aside.
- Preheat oven to 400°F (200°C). Line a baking sheet.
- Spread refried beans on one tortilla, top with seasoned beef, then place another tortilla on top.
- Spread tomato or enchilada sauce over the top tortilla. Sprinkle with cheeses, diced tomatoes, olives, and green onions.
- Bake for 8–10 minutes, until cheese is melted and bubbly.
- Cool slightly, slice into quarters, and serve with sour cream, jalapeños, or hot sauce if desired.
Notes
- Use ground turkey or shredded chicken for variety.
- For vegetarian, double the beans or use mashed black beans or lentils.
- Add corn, bell peppers, or a spicy salsa for more texture and flavor.
- Use gluten-free tortillas and seasoning to make it gluten-free.
- Prep components ahead, but assemble and bake fresh for best texture.
