This Melty Chicken Avocado Sandwich is a quick, flavorful meal layered with juicy chicken, creamy avocado, tomato, and gooey cheese between perfectly toasted bread.
Ingredients
- 1 cooked chicken breast, sliced or shredded
- 1 ripe avocado, sliced or mashed
- 1 small tomato, sliced
- 4 slices mozzarella or provolone cheese
- 1/2 cup fresh spinach or arugula (optional)
- 4 slices sourdough, ciabatta, or sandwich bread
- 1 tbsp olive oil or butter (for grilling)
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- In a small bowl, mash avocado with lemon juice, salt, and pepper.
- Heat a skillet or grill pan over medium heat.
- Lay out the bread slices. On two slices, layer cheese, chicken, tomato, avocado, and greens if using. Add another slice of cheese and top with remaining bread.
- Brush the outsides of the bread with olive oil or butter.
- Grill sandwiches in the skillet for 3–4 minutes per side, pressing gently, until golden and cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
