Description

This Melty Chicken Avocado Sandwich is a quick, flavorful meal layered with juicy chicken, creamy avocado, tomato, and gooey cheese between perfectly toasted bread.


Ingredients

  • 1 cooked chicken breast, sliced or shredded
  • 1 ripe avocado, sliced or mashed
  • 1 small tomato, sliced
  • 4 slices mozzarella or provolone cheese
  • 1/2 cup fresh spinach or arugula (optional)
  • 4 slices sourdough, ciabatta, or sandwich bread
  • 1 tbsp olive oil or butter (for grilling)
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash avocado with lemon juice, salt, and pepper.
  2. Heat a skillet or grill pan over medium heat.
  3. Lay out the bread slices. On two slices, layer cheese, chicken, tomato, avocado, and greens if using. Add another slice of cheese and top with remaining bread.
  4. Brush the outsides of the bread with olive oil or butter.
  5. Grill sandwiches in the skillet for 3–4 minutes per side, pressing gently, until golden and cheese is melted.
  6. Remove from heat, let cool slightly, then slice and serve warm.
