Description

Mediterranean Salmon Patties are crisp on the outside and tender on the inside, made with flaky salmon, fresh herbs, lemon, and garlic. They’re perfect for a quick, healthy meal or snack.


Ingredients

  • 2 cups cooked salmon (fresh, leftover, or canned)
  • 2 eggs
  • 1/2 cup breadcrumbs or panko
  • 1/4 cup red onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil (for pan frying)

Instructions

  1. Flake the salmon into a large mixing bowl, removing any skin or bones if necessary.
  2. Add eggs, breadcrumbs, red onion, garlic, parsley, lemon zest, lemon juice, mustard, oregano, salt, and pepper.
  3. Mix until well combined, then form into small patties (2–3 inches in diameter).
  4. Heat olive oil in a skillet over medium heat and cook the patties in batches, 3–4 minutes per side until golden and crisp.
  5. Drain on paper towels and serve warm with lemon wedges or dipping sauce.

Notes

  • Add sun-dried tomatoes or crumbled feta for variation.
  • Use almond flour instead of breadcrumbs for a low-carb version.
  • Can substitute salmon with canned tuna.
  • Bake at 400°F (200°C) for about 15 minutes for a lighter option.
