Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 carrots, diced
- 1/3 cup sun-dried tomatoes (oil-packed, drained), chopped
- 5 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 2 cups fresh spinach or kale
- Salt and pepper to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion and carrots until softened, about 5–7 minutes.
- Add garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
- Season chicken with salt, pepper, and Italian seasoning. Add to pot and sear lightly on both sides.
- Pour in chicken broth. Bring to a simmer and cook chicken until done, about 15–20 minutes. Remove and shred.
- Return shredded chicken to pot. Stir in cream and Parmesan; reduce heat and cook until smooth.
- Add red pepper flakes (if using) and spinach or kale. Stir until wilted, about 2–3 minutes.
- Simmer soup for 5–10 minutes. Adjust seasoning as needed.
- Serve hot, garnished with fresh basil or parsley.
