Description

Marry Me Chicken Soup (Tuscan Style) is a creamy, comforting soup inspired by the classic dish, featuring tender chicken, sun-dried tomatoes, Italian herbs, and spinach in a rich Parmesan broth. Perfect for cozy nights or impressing guests.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 2 carrots, diced
  • 1/3 cup sun-dried tomatoes (oil-packed, drained), chopped
  • 5 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and carrots until softened, about 5–7 minutes.
  2. Add garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
  3. Season chicken with salt, pepper, and Italian seasoning. Add to pot and sear lightly on both sides.
  4. Pour in chicken broth. Bring to a simmer and cook chicken until done, about 15–20 minutes. Remove and shred.
  5. Return shredded chicken to pot. Stir in cream and Parmesan; reduce heat and cook until smooth.
  6. Add red pepper flakes (if using) and spinach or kale. Stir until wilted, about 2–3 minutes.
  7. Simmer soup for 5–10 minutes. Adjust seasoning as needed.
  8. Serve hot, garnished with fresh basil or parsley.
