Ingredients

- 6 tbsp unsalted butter, melted

- For the filling:
- 24 oz cream cheese, softened
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup sour cream
- 2 tbsp fresh lemon juice
- 1 tbsp fresh lime juice
- 1 tsp lemon zest
- 1 tsp lime zest
- 1 tsp vanilla extract
- 1/3 cup chopped pistachios
- For the topping:
- 1 1/2 cups cherry pie filling or fresh cherry compote
- 2 tbsp chopped pistachios (for garnish)
- Lemon and lime zest (optional, for garnish)
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix crust ingredients and press into the bottom of the pan. Bake for 10 minutes, then cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until combined.
- Stir in sour cream, lemon juice, lime juice, zests, vanilla, and fold in pistachios.
- Pour filling into the crust. Bake for 55–65 minutes until the center is just set.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, top with cherry filling, chopped pistachios, and optional citrus zest.
