Description

London Fog Cake is a soft, elegant dessert inspired by the Earl Grey latte, featuring layers of tea-infused cake and creamy Earl Grey buttercream, perfect for birthdays, tea time, or any sophisticated celebration.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 4 Earl Grey tea bags (for steeping in milk)
  • 1 cup unsalted butter, softened (for buttercream)
  • 33 1/2 cups powdered sugar (for buttercream)
  • 3 tablespoons strong brewed Earl Grey tea, cooled (for buttercream)
  • 1 teaspoon vanilla extract (for buttercream)
  • Pinch of salt (for buttercream)
  • Optional: whipped cream, berry jam, or white chocolate ganache for filling/topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Warm the milk and steep Earl Grey tea bags for 10 minutes. Let cool and remove bags.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  5. Alternate adding dry ingredients and tea-infused milk to the butter mixture, starting and ending with dry ingredients.
  6. Divide batter between pans and bake 25–30 minutes, or until a toothpick comes out clean.
  7. Let cakes cool in pans 10 minutes, then turn out onto a wire rack to cool completely.
  8. For the buttercream, beat softened butter until creamy. Gradually add powdered sugar, then tea, vanilla, and salt until smooth and fluffy.
  9. Frost the cooled cakes with Earl Grey buttercream. Add jam or ganache if using.
  10. Chill briefly to set frosting before slicing and serving.

Notes

  • Add lavender to steeped milk for a floral twist or lemon zest for brightness.
  • Use finely ground Earl Grey tea in batter or frosting for stronger flavor.
  • Store tightly covered in the fridge for up to 4 days; bring to room temp before serving.
  • Freeze individual slices for up to 2 months.
