Ingredients
- For the Lemon Syrup:
- 1/2 cup fresh lemon juice
- 1/2 cup water
- 1/4 cup granulated sugar
- For the Tiramisu:
- 1 pack ladyfingers (savoiardi)
- 8 oz mascarpone cheese, softened
- 3/4 cup heavy cream
- 1/4 cup powdered sugar
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 1/4 cup lemon curd (optional)
- Fresh mint and additional lemon zest for garnish (optional)
Instructions
- Make the Lemon Syrup: In a small saucepan, combine lemon juice, water, and sugar. Bring to a simmer and stir until sugar dissolves. Let cool.
- Prepare the Filling: In a bowl, whisk mascarpone, powdered sugar, lemon zest, lemon juice, and vanilla until smooth. Whip heavy cream to stiff peaks in another bowl. Gently fold whipped cream into the mascarpone mixture. Stir in lemon curd, if using.
- Assemble: Quickly dip ladyfingers in lemon syrup and layer in a 9×9-inch dish. Spread half the mascarpone mixture on top. Repeat layers.
- Chill: Cover and refrigerate for at least 4 hours or overnight to set.
- Serve: Garnish with lemon zest and mint before serving. Serve chilled.
