- 3 tbsp butter
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp lemon zest
- Salt and black pepper to taste
- Fresh parsley or dill (optional, for garnish)
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Toss baby potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet and roast for 15–20 minutes until starting to crisp.
- Meanwhile, melt butter and mix with lemon juice, zest, garlic, salt, and pepper.
- Add broccoli to the baking sheet, drizzle with 1 tbsp olive oil, and season lightly.
- Place salmon fillets among the vegetables and spoon lemon butter sauce over each piece.
- Return to oven and roast for 12–15 minutes, until salmon is flaky and potatoes are golden.
- Garnish with fresh herbs and serve directly from the pan.
Notes
- Swap broccoli with green beans, asparagus, or Brussels sprouts.
- Use sweet potatoes for a sweeter flavor profile.
- Add red pepper flakes to the lemon butter for heat.
- Substitute butter with olive oil for a dairy-free version.
