Lazy Day Lemon Cream Pie Bars are a simple, zesty dessert with a buttery graham cracker crust and creamy lemon filling. They’re refreshingly tart, quick to make, and perfect for sunny days or casual get-togethers.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 tbsp lemon zest
- 3 large egg yolks
- 1/2 tsp vanilla extract (optional)
- Whipped cream or whipped topping (optional)
- Extra lemon zest or thin lemon slices for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter until combined.
- Press mixture into the baking dish to form the crust. Bake for 8–10 minutes, then cool slightly.
- Whisk together sweetened condensed milk, lemon juice, zest, egg yolks, and vanilla until smooth.
- Pour filling over the crust and spread evenly.
- Bake for 15–18 minutes until the filling is set and slightly firm.
- Cool to room temperature, then refrigerate for at least 2 hours before slicing.
- Top with whipped cream and garnish with lemon zest or slices if desired.
Notes
- Substitute crushed vanilla wafers or shortbread for a different crust.
- Try a lime version by using fresh lime juice and zest.
- Top with a lemon glaze for extra punch.
- Chill thoroughly and use a clean knife for neat cuts.
