Description

Lazy Day Lemon Cream Pie Bars are a simple, zesty dessert with a buttery graham cracker crust and creamy lemon filling. They’re refreshingly tart, quick to make, and perfect for sunny days or casual get-togethers.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tbsp lemon zest
  • 3 large egg yolks
  • 1/2 tsp vanilla extract (optional)
  • Whipped cream or whipped topping (optional)
  • Extra lemon zest or thin lemon slices for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press mixture into the baking dish to form the crust. Bake for 8–10 minutes, then cool slightly.
  4. Whisk together sweetened condensed milk, lemon juice, zest, egg yolks, and vanilla until smooth.
  5. Pour filling over the crust and spread evenly.
  6. Bake for 15–18 minutes until the filling is set and slightly firm.
  7. Cool to room temperature, then refrigerate for at least 2 hours before slicing.
  8. Top with whipped cream and garnish with lemon zest or slices if desired.

Notes

  • Substitute crushed vanilla wafers or shortbread for a different crust.
  • Try a lime version by using fresh lime juice and zest.
  • Top with a lemon glaze for extra punch.
