Description

Hummingbird Bread with Heavenly Cinnamon Cream Cheese Frosting is a moist and flavorful quick bread loaded with bananas, pineapple, and pecans, finished with a spiced cream cheese frosting for a tropical, Southern-inspired treat.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup crushed pineapple with juice
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts
  • For the frosting:
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 12 tsp milk or cream, as needed

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, salt, granulated sugar, and brown sugar.
  3. In another bowl, mix mashed bananas, crushed pineapple, eggs, oil, and vanilla until well combined.
  4. Pour wet mixture into dry ingredients and stir until just combined. Fold in chopped pecans.
  5. Pour batter into prepared loaf pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. To make the frosting, beat cream cheese and butter until smooth. Add powdered sugar, cinnamon, and vanilla. Add milk or cream as needed for desired consistency.
  8. Spread frosting over cooled bread and top with extra nuts if desired.

Notes

  • Add shredded coconut for extra tropical flavor.
  • Use applesauce for part of the oil to lighten the bread.
  • Add nutmeg or allspice for more spice depth.
  • Make as muffins by reducing bake time to 20–25 minutes.
  • Freeze unfrosted loaf and frost after thawing for best results.
