Description

Ingredients

  • 46 boneless chicken thighs or breasts
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying
  • 2 cups all-purpose flour (for biscuits)
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt (for biscuits)
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk (for biscuits)
  • 1/2 cup honey
  • 12 tsp red pepper flakes
  • 1 tsp hot sauce (optional, for hot honey)

Instructions

  1. Marinate chicken in buttermilk and hot sauce for at least 1 hour or overnight.
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. In a large bowl, whisk flour, baking powder, baking soda, and salt for biscuits. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk to form a soft dough.
  4. Roll dough out, fold for layers, and cut into rounds. Bake for 15–20 minutes until golden.
  5. Mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper in a bowl. Dredge marinated chicken, pressing to coat.
  6. Heat oil to 350°F (175°C) and fry chicken until golden and cooked through, about 6–8 minutes per side. Drain on a wire rack.
  7. Warm honey with red pepper flakes and optional hot sauce for 2–3 minutes over low heat. Let sit to infuse.
