Ingredients
- 4–6 boneless chicken thighs or breasts
- 1 cup buttermilk
- 2 tbsp hot sauce
- 1 1/2 cups all-purpose flour

- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper

- 1/2 cup cold unsalted butter, cubed
- 3/4 cup buttermilk (for biscuits)

- 1 tsp hot sauce (optional, for hot honey)
Instructions
- Marinate chicken in buttermilk and hot sauce for at least 1 hour or overnight.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk flour, baking powder, baking soda, and salt for biscuits. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk to form a soft dough.
- Roll dough out, fold for layers, and cut into rounds. Bake for 15–20 minutes until golden.
- Mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper in a bowl. Dredge marinated chicken, pressing to coat.
- Heat oil to 350°F (175°C) and fry chicken until golden and cooked through, about 6–8 minutes per side. Drain on a wire rack.
- Warm honey with red pepper flakes and optional hot sauce for 2–3 minutes over low heat. Let sit to infuse.
- Split biscuits, add fried chicken, and drizzle with hot honey. Serve immediately.
