Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Pineapple slices (optional, for grilling)
Instructions
- In a medium bowl, whisk together pineapple juice, honey, soy sauce, minced garlic, and ginger.
- Place the chicken in a zip-top bag or shallow dish and pour the marinade over it. Refrigerate for at least 2 hours or overnight.
- Preheat the grill to medium-high heat and oil the grates.
- Remove chicken from marinade and grill for 6–7 minutes per side or until cooked through and slightly charred.
- If using, grill pineapple slices for a few minutes on each side until caramelized.
- Let the chicken rest for a few minutes before slicing and serving.
