Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 2 garlic cloves, minced
  • 2 cups cooked white or brown rice
  • 1 ripe avocado
  • Salt and black pepper to taste
  • Optional: chopped fresh cilantro for garnish
  • Optional: red pepper flakes or chopped jalapeño for heat

Instructions

  1. In a bowl, mix olive oil, honey, lime juice, garlic, salt, and pepper to create the marinade.
  2. Coat chicken with the marinade and let it sit for at least 30 minutes, or refrigerate overnight for deeper flavor.
  3. Heat a skillet over medium-high heat and cook chicken for 6–7 minutes per side until fully cooked. Let rest for 5 minutes, then slice thinly.
  4. Mash the avocado with a pinch of salt and a squeeze of lime juice.
