Ingredients
- For the cookies:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- For the filling:
- 1 strawberry ice cream (store-bought or homemade)
- 1/2 cup fresh strawberries, finely chopped (optional)
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter with granulated and brown sugar until fluffy.
- Beat in egg and vanilla.
- Gradually mix dry ingredients into wet ingredients until combined.
- Scoop dough onto baking sheet and flatten slightly.
- Bake 10–12 minutes, until edges are set. Let cookies cool completely.
- Let ice cream soften slightly at room temperature. Fold in chopped strawberries if using.
- Spoon or scoop ice cream onto the flat side of one cookie. Top with another cookie and press gently.
- Wrap each sandwich in parchment or plastic wrap and freeze for 1–2 hours, or until firm.

- Use chocolate chip, sugar, or strawberry shortbread cookies for variety.
- Roll edges in mini chocolate chips, crushed freeze-dried strawberries, or sprinkles.
