Description

Grilled Peach and Blueberry Salad is a vibrant, summery dish that combines smoky grilled peaches, fresh blueberries, creamy cheese, and a zesty balsamic dressing. This elegant yet simple salad is perfect for barbecues, light lunches, or anytime you want to celebrate seasonal fruit with a gourmet twist.


Ingredients

  • 3 fresh peaches, halved and pitted
  • 1 cup fresh blueberries
  • 5 oz mixed salad greens or arugula
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup goat cheese or feta, crumbled
  • 2 tablespoons olive oil (plus more for brushing peaches)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or grill pan and lightly oil the grates.

  2. Brush the cut sides of the peaches with olive oil. Grill cut-side down for 2–3 minutes per side, until grill marks appear and peaches soften slightly. Let cool, then slice.

  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the dressing.

  4. In a large bowl, combine salad greens, grilled peach slices, blueberries, red onion, and crumbled goat cheese.

  5. Drizzle dressing over the salad and toss gently to combine just before serving.
