Description

This Greek Feta Salad Tower is a vibrant and elegant twist on the traditional Greek salad, featuring stacked layers of crisp vegetables, briny olives, and creamy feta cheese. Perfect for entertaining or a refreshing lunch, it’s both visually impressive and deliciously fresh.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced into thin rounds
  • 1/2 red onion, finely sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 6 oz feta cheese, cut into thick slabs
  • 1 tbsp fresh oregano or parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/2 bell pepper, sliced
  • Optional: 1/2 avocado, sliced

Instructions

  1. Prepare the vegetables: halve the cherry tomatoes, slice the cucumber and red onion, and cut feta into uniform blocks.
  2. On a plate or serving board, start stacking with a base layer of cucumber slices.
  3. Add a layer of cherry tomatoes and red onion, followed by a slab of feta.
  4. Repeat the layers to build height, maintaining balance.
  5. Scatter the olives on top and drizzle with olive oil and red wine vinegar.
  6. Sprinkle with chopped herbs, salt, and freshly ground pepper before serving.

Notes

  • Use firm block-style feta for best structure.
  • To stabilize the tower, gently press layers and use toothpicks if needed.
  • Customize with grilled protein, hummus, or balsamic glaze for variety.
  • Store unstacked in an airtight container in the fridge for up to 2 days.
  • Serve cold or at room temperature for best flavor and texture.
