Description

Inspired by Gordon Ramsay, this Shrimp Scampi recipe delivers juicy shrimp in a rich garlic, butter, white wine, and lemon sauce. Quick, elegant, and full of bold flavors, it’s a perfect 30-minute dinner that feels restaurant-worthy.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 teaspoon red chili flakes (optional)
  • 1/3 cup dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste
  • Pasta or crusty bread, for serving

Instructions

  1. Season shrimp with salt and black pepper.
  2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat.
  3. Add shrimp in a single layer. Cook 1–2 minutes per side until pink and slightly curled. Remove from skillet and set aside.
  4. Reduce heat to medium. Add remaining butter, garlic, and red chili flakes. Sauté for 30 seconds until fragrant.
  5. Deglaze pan with white wine, scraping up browned bits. Simmer for 1–2 minutes to reduce slightly.
  6. Stir in lemon juice and zest. Return shrimp to skillet and toss to coat, warming through.
  7. Sprinkle with chopped parsley and a drizzle of olive oil before serving.
  8. Serve hot over pasta or with crusty bread.

Notes

  • Substitute white wine with chicken broth and extra lemon juice for a non-alcoholic version.
  • Add cherry tomatoes or spinach for extra color and nutrients.
  • Toss with linguine or spaghetti for a heartier meal.
  • Add a splash of cream for a richer sauce.
  • Avoid overcooking shrimp by removing them once pink and returning just to reheat.
