Ingredients
- 4 salmon fillets
- 1/2 cup pineapple juice
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger (optional)
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Optional: pineapple chunks, for garnish
- Optional: fresh parsley or green onions, chopped, for garnish
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper or foil.
- Season salmon fillets with salt and black pepper and place them on the prepared baking sheet.
- In a small saucepan, combine pineapple juice, honey, soy sauce, garlic, and ginger. Simmer over medium heat for 5–7 minutes until slightly thickened.
- Brush glaze generously over the salmon fillets, reserving some for serving.
- Bake salmon for 12–15 minutes, or until the fish flakes easily with a fork.
- Spoon remaining glaze over the top and garnish with parsley, green onion, and optional pineapple chunks.
