Ingredients
- 4 salmon fillets (skin-on or skinless)
- Salt and black pepper to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced (cremini or button)
- 3 cups baby spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- 2 tbsp fresh parsley, chopped (for garnish, optional)
Instructions
- Season salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon, skin-side down first, for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic and mushrooms until mushrooms are browned and tender.
- Add spinach and cook until just wilted.
- Pour in heavy cream, Parmesan, lemon juice, Italian seasoning, and red pepper flakes (if using). Stir and simmer until sauce slightly thickens.
- Return salmon to skillet and spoon sauce over the fillets. Simmer for 1–2 minutes more.
- Garnish with fresh parsley and serve hot.

- Swap salmon with chicken or shrimp for variation.
- Add sun-dried tomatoes or white wine for extra richness.
- Use half-and-half for a lighter version of the sauce.
- For dairy-free, substitute coconut cream and nutritional yeast.
