Ingredients
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 2/3 cup milk
- 1 tsp vanilla extract
- Oil for frying (vegetable or canola)
- Powdered sugar, for dusting
Instructions
- Heat oil in a deep skillet or saucepan to 350°F.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs, then mix in milk and vanilla extract.
- Combine wet and dry ingredients to form a smooth batter.
- Drop small spoonfuls of batter into hot oil, frying a few at a time.
- Fry each batch for 1–2 minutes per side until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar and serve warm.
