Ingredients
- For the chicken:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- For the bruschetta topping:
- 2 cups cherry tomatoes, halved or diced
- 1/4 cup fresh basil, chopped
- 2 garlic cloves, minced
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- Salt and pepper, to taste
- Optional: 1/2 cup shredded mozzarella or grated Parmesan
Instructions
- Season chicken with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Sear chicken 5–7 minutes per side, until golden and fully cooked. Remove and let rest.
- In a bowl, mix cherry tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper to make the bruschetta topping.
- Spoon tomato mixture over each chicken breast.
- If using cheese, return chicken to skillet, top with cheese, cover, and cook 2–3 minutes until melted.
- Serve hot, optionally drizzled with balsamic glaze and extra fresh basil.
Notes
- Grill chicken instead of pan-searing for extra flavor.
- Add avocado or red onion to the bruschetta for variation.
- Serve over pasta, rice, or quinoa for a fuller meal.
- Reheat chicken separately and top with fresh bruschetta for best texture.
