Description

This Easy Taco Soup is a quick, hearty, and flavor-packed one-pot meal loaded with ground beef, beans, corn, tomatoes, and zesty taco spices. It’s the perfect 30-minute dinner for busy weeknights or casual gatherings, topped with your favorite taco fixings for a comforting, customizable bowl of goodness.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth (or water)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, fresh cilantro, crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef, breaking it up with a spoon.

  2. Add chopped onion and garlic. Cook until onion is soft, about 3–4 minutes.

  3. Stir in taco seasoning until meat is well coated.

  4. Add diced tomatoes, corn, black beans, pinto beans, tomato sauce, and beef broth. Stir to combine.

  5. Bring to a boil, then reduce heat and simmer for 20 minutes.

  6. Taste and adjust seasoning as needed.

  7. Serve hot with your favorite toppings like cheese, sour cream, and crushed tortilla chips.


Notes

  • Swap ground beef with turkey or chicken for a lighter version.
