Ingredients
- 1 (20 oz) package refrigerated or frozen cheese tortellini
- 12 oz kielbasa sausage, sliced into coins
- 2 bell peppers (any color), sliced
- 1 red onion, sliced
- 1 zucchini or 1 cup broccoli florets (optional)
- 2–3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- Grated Parmesan cheese (optional, for serving)
- Fresh parsley or basil (optional, for garnish)
Instructions
- Preheat oven to 400°F and line a large sheet pan with parchment paper or grease lightly.
- If using frozen tortellini, boil for 2–3 minutes to soften slightly, then drain. Refrigerated tortellini can be used as-is.
- On the sheet pan, spread out tortellini, kielbasa, bell peppers, onion, and optional vegetables.
- Drizzle with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
- Toss everything to coat and spread in a single layer.
- Bake for 25–30 minutes, flipping halfway through, until tortellini are golden and kielbasa is sizzling.
- Top with Parmesan and fresh herbs if desired before serving.
Notes
- Use spinach or mushroom tortellini for variety.
- Try turkey or andouille sausage instead of kielbasa.
- Add red pepper flakes for heat.
- Finish with balsamic glaze or lemon juice for brightness.
