Description

Easy Low Carb Chicken Casserole is a creamy, cheesy comfort food dish packed with tender chicken and low-carb vegetables like broccoli or cauliflower. It’s keto-friendly, quick to prep, and bakes into a satisfying, family-approved dinner without the carbs.


Ingredients

  • 23 cups cooked, shredded or cubed chicken breast or thighs
  • 4 oz cream cheese, softened
  • ½ cup sour cream or plain Greek yogurt
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • 2 cups steamed broccoli or cauliflower florets (or a mix)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9 or similar-sized baking dish.

  2. In a large bowl, mix softened cream cheese, sour cream, garlic powder, onion powder, salt, pepper, and half the cheddar and mozzarella until smooth.

  3. Stir in the cooked chicken and steamed vegetables until evenly coated.

  4. Spread the mixture evenly in the prepared casserole dish.

  5. Top with remaining cheese.

  6. Bake uncovered for 20–25 minutes, or until hot, bubbly, and lightly golden.

  7. Let cool for a few minutes before serving. Garnish with green onions.
